It’s so easy!
you will need
Nori Sheets
Cauliflower (white or purple)
Macadamia Nuts
Cucumber
Pepper (red, orange, green or yellow) - whatever you like
Avocado
you can add sprouts for added crunch - will try this next
and 
Chickpea Miso - you can easily find this at Whole Foods. I found one by South River which is delicious and organic. You can also use the miso in soups - so it is something you can certainly use in other dishes. 
I don’t usually measure much when I cook, I go more on taste. Basically place some cauliflower florets along with some macadamea nuts in a food processor until it’s finely chopped. Slice your veggies with a veggie slicer - thin slices are best. Place your Nori sheet on a cutting board and start adding your ingredients.  I added the cucumber slices, red pepper slices and avocado in the middle, cauliflower rice on the top and spread the miso on the bottom and rolled. (I basically followed what Enovalee did)  
There you have it - raw vegan sushi
What I loved about the cauliflower rice variation is that it wasn’t so heavy and filling, it was crispy, tasty and refreshing. I am definitely going to experiment with different veggies. yay!
